Ann was given a hard trial, the care of cute cystic fibrosis ridden MD. The thing is I couldn't think of a better qualified woman for the job. She has a memory like no one I know and can remember the 20+ medications she needs give MD each day. She has determination and gumption to fight for the needs of MD. She is smart and knows how to do her research and figure things out, she is resourceful. Most importantly she knows how to rely on her Heavenly Father and to seek and follow the promptings of the Holy Ghost as she cares for her family. I believe Ann agreed to this difficult responsibility before she came to earth and was thus prepared for it. I love and admire you Ann, Happy Birthday.

I'm still trying to figure out how you do it all! One thing I do know about you is that you are diligent and patient. I remember in high school when you used to get up at 5 in the morning to exercise before school! That takes dedication and diligence. You've also always had the patience for the details of life, no wonder why dad alway had you make the corsages and boutonnieres. But more importantly these traits you developed early in life prepared you for the significant role you have now of a mother and wife, which requires even more dedication, diligence and patience! A good teacher. He teaches by example by going to the temple often with his wife, by serving a mission, by doing kinds little acts of service, by serving in the temple. He also is very direct in his teaching at times. I knew he would teach me how to be a better artist, even if it was a bit hard to hear his suggestions, at least I knew he was being honest. He doesn't beat around the bush. If there is something important that needs to be learned he will share it, through his testimony, through a talk in sacrament meeting, through a conference talk he suggests you listen to or by just telling you. He taught me what to look for in a husband because of the way I've observed him treat my mom! I love you! Love, Ashley

I actually enjoy Mondays. I get the laundry finished and I plan my meals for the week. This week we are having:

MONDAY : Sprouted lentil burgers (adapted from this recipe) yogurt dill sauce on top!

TUESDAY : Pistachio bow tie pasta (adapted from this recipe) I double the pistachios, use grapes instead of pomegranates and bow tie pasta to hold the sauce better.

WEDNESDAY: Brian won't be home for dinner so I'll keep it simple. Cabbage crunch salad with red bell peppers and toasted almonds.

THURSDAY : Lemon Chicken soup with Orzo (I'll let you know if it's any good-see recipe above from Ellie Krieger) because soup is always nice when there is snow expected.

FRIDAY: Confetti Chili (also from Ellie Krieger)

SATURDAY : Go out for some BiBimBop, maybe!

HAPPY BIRTHDAY JORDAN! Jordan and I are only 14 months apart. When we were in high school we were able to take a couple of classes together. Physiology was one of those classes. I remember Jordan always aced the tests with such ease. I always seemed to study twice as long and hard but never did as well as she did! She's just smart! But more importantly she has wisdom. Katy and I took an English class together in college. We thought we were smart an efficient because we would take turns going to class and fill each other in on the lecture. We did a research paper and report on alternative childbirth together. Our teacher asked us if we would practice alternative childbirth methods when we became mothers. Back then it seemed ages before either of us would actually be making our own decisions on childbirth. Katy was the first to marry and the first to begin bringing children into this world. She has experienced all sorts of methods of bringing children into this world. I was able to attend the birth of Olive, Katy and Ryan's third daughter. Katy amazed me (even more so after I myself gave birth). No matter what method of childbirth Katy chose with each new baby she did it with grace and reverence. This is why I admire Katy, no matter what she does, she does it with a grace and reverence for life. Thank you for your example Katy, love Ashley.

Eli, Ivy, and I took a little hike up the Provo river trail to Bridal Veil Falls to cool off a bit. The water was a bit frigid to wade in but Eli thoroughly enjoyed throwing rocks in it. Ivy slept the whole time snuggled up to my chest in the Baby Bjorn.

I've always enjoyed Ben's company. He's easy going and funny! I think Ben is about 14 or 15 years old in this picture, at least I know he wasn't old enough to drive, which gave me an excuse or allowed me to bribe Ben and his friends into a camping trip down south in Escalante as their designated driver. They wanted me to have the baby while they were here, but as you can see from this photo which was taken minutes before my three east coast sisters left for the airport, their wish did not come true. We had a beautiful weekend together celebrating the return of my parents from their mission in Korea! Sad it has already come to an end and sad I didn't find my camera until minutes before they left!

Tart and tangy, no sugar added juice from South Africa! All of their juices are good, but Passion Fruit is the best!

Home made ORANGE POPPYSEED dressing:

1/2 t orange zest

1/3 cup orange juice

1 T powdered fruit pectin

1 T honey

1/2 poppy seeds

mix and chill for a couple of hours

PERUVIAN QUINOA STEW

1/2 cup Quinoa

1 cup water

-rinse quinoa well, cook in water on medium low for about 15 mins.

2 cups chopped onion

2 garlic cloves minced

2 T olive oil

2 celery stalks chopped

2 carrots sliced

1 red bell pepper diced

2 cups of undrained fresh or canned tomatoes

1 cup broth

2 t ground cumin

1/2 t chili powder

1 t ground coriander

pinch of cayenne

1 t oregano

salt to taste

add cooked quinoa

top with cilantro and monterey jack cheese

I'll be making this for the fam on Friday evening!

Look how pale we are! We must be sisters! There are two characteristics which Ann posses that when combined make a mighty woman! She is strong willed and she is in tune with the Spirit. With this combination Ann is the one you want around, she won't mislead you! Jacob has always been the best companion. We got along great growing up and he was always up for an adventure. When we first moved to Utah we explored the new neighborhood together by bike. We ventured up Y mountain for some snow camping, 3 of us in a 2 man tent! Backbacking the slot canyons of Escalante. Treking through Mexico on buses in the middle of the night. Or leisure camping and fishing in the Uintas! He is still the easiest guy to get along with and the one I enjoy having on my adventures! Happy Birthday love, ashley

Eli discovered a pile of hats that were on their way to Deseret Industries!
Olivia and I got together to work on projects. All my projects got pushed aside until after the Christmas star rush. It feels good to be working with nice soft felt instead of glass! This was going to be a monster but turned into a doll. Still in the works.
Neglected projects even included meal plans. This one is one of my favorite. Sprouted lentils that are put in the food processor with eggs, onions and bread crumbs and voila lentil burgers! Topped with yogurt dill sauce, yum (see 101cookbooks for recipe)

JACOB WAS THE HOST OF OUR EVENING OUT TONIGHT. HE TOOK US TO THE END OF THE PROVO RIVER WHERE IT MEETS UTAH LAKE. IT WAS RAINING AS WE PUSHED OFF INTO THE WATER BUT CLEARED UP BEAUTIFULLY. WE CAUGHT NO FISH BUT WE ENJOYED CALM WATER, DUCKS, MOOING COWS, RAINBOWS AND EACH OTHERS COMPANY!

Knudsen High Mountain Retreat

Friday afternoon we headed up into the Mirror Lake region just beyond the city of Kamas.

Jacob went straight for the lakes for some fly fishing. I started a fire for some tin-foil dinners with a balsamic rosemary marinade and luckily Ben and Olivia found us after driving up the Mirror Lake scenic byway a few times! For breakfast Brian and I ate roasted marshmallow peanut butter sandwiches due to me forgetting the jelly (they were tasty)! Then we headed out on a hike with stops at three different lakes and a fishing tutorial from the fishing expert, Jacob. He was the only one to catch any fish!

The first time Brian and I had a sip of DRY SODA was in a restaurant in Seattle. The flavor was Kumquat. I tracked them down again at Liberty Heights Fresh in SLC and continued to sample the flavors one bottle at a time, because they are $2.50 each. Now Maestros Gelato on center street in Provo carries them and my all time favorite flavor is JUNIPER! They are very subtle flavors and aren't sweet, so not all will like them. But if you were to try one definitely try the JUNIPER.

Cool Air Concert

I was checking out Erin McKeown's website to see if she would be in Utah anytime soon and saw that she was playing at the Women's Festival in Torrey Utah. She rarely comes out west so I was excited, but to increase the excitement I saw her next stop was Snowbird, UT as a part of the Cool Air FREE Concert series! Yipppeeee! It just got better. I was a little worried after attending the free concert series at the Gallivan Center with thousands of people that don't even know who their listening to. As we rounded the corner there was a small group of people sitting on chairs listening politely to Erin! We sat three rows back among about 50 people! I couldn't have asked for a better Saturday evening! Chilly fall weather, Brian, Eli and some good music!

Most women get a little chubby after giving birth a few times, not my sis! She was cute and chubby as a little girl, but as a mother of five she's trim and slim! I'll always remember the semester Katy and I took English together. We would take turns going to class and would fill each other in on what the other missed so we both didn't have to go! We made a good team. But the fact is Katy makes a good team with anyone she's paired with! Katy is easy to get along with and fun to be with. In that English class we did a report on alternative birthing practices and it's been fascinating to watch her put to use those things into practice that we researched! I LOVE YOU KATY!

WE PLAYED AT A WATERPARK, ENJOYED TALENT SHOWS, ATE PIZZA, HAD A BASKETBALL TOURNAMENT, ATTENDED A SESSION AT THE TEMPLE, PLAYED GAMES OF HORSESHOE, SAT AROUND CHATTING, LISTENED TO LARSEN FAMILY HERITAGE STORIES (BRIAN'S MOTHER'S PARENTS) AND TOMORROW WE FINISH IT OFF WITH A GAME OF BOWLING! Aunt Louis (pictured in green) was our lovely hostesses this fourth o' July!

We missed having the fourth up on the hill in Provo this year but are grateful for the generosity of the Morgan family for including us Knudsen's this year! We ate white chocolate popcorn, perfectly cooked steaks, coleslaw with ginger, homemade french onion dip with veggies, mango salsa, and fruit galore. Midway had a pretty good firework show and it was fun getting together with aunts uncles and cousins! We missed you m&d!

We had a beautiful green and rocky weekend in Maple Canyon just West of Moroni. The Sanpete Valley was the greenest I've ever seen it, as if we were in Ireland. The rock formations were surreal and towering. Surrounded with the compatible company of the Shurtleff's and the Bergs making a total of three couples and three cute kids!

BOX CANYON

Rumor is that this canyon attracts rock climbers from all over the world because of the rare geological conglomerate rock formations found here.

Gardens

My swiss chard was mighty big after not seeing it for a week so we made a meal of it. Sauteed it in olive oil and garlic and then put a little soy ginger vinaigrette on it! I love how rewarding a garden can be and I'm always curious to see how other people's gardens are doing and what they are growing. When I go on my morning jogs I am always on alert for gardens. There are some big ones around here that make me jealous and wonder who will eat all that food
