Favorites as of late

Tart and tangy, no sugar added juice from South Africa! All of their juices are good, but Passion Fruit is the best!

Home made ORANGE POPPYSEED dressing:
1/2 t orange zest
1/3 cup orange juice
1 T powdered fruit pectin
1 T honey
1/2 poppy seeds

mix and chill for a couple of hours

PERUVIAN QUINOA STEW
1/2 cup Quinoa
1 cup water
-rinse quinoa well, cook in water on medium low for about 15 mins.
2 cups chopped onion
2 garlic cloves minced
2 T olive oil
2 celery stalks chopped
2 carrots sliced
1 red bell pepper diced
2 cups of undrained fresh or canned tomatoes
1 cup broth
2 t ground cumin
1/2 t chili powder
1 t ground coriander
pinch of cayenne
1 t oregano
salt to taste
add cooked quinoa
top with cilantro and monterey jack cheese

I'll be making this for the fam on Friday evening!
